My name is Sarah Margaret Giomi and I am a student at Eastern Washington University in Cheney, Washington. I am pursuing a degree in communication and public relations , learning to become an event planner, and aspiring to be a wedding planner. At school, I am the president of the Public Relations Student Society of America (PRSSA) chapter, have been involved with the women’s center, am a part of my school’s campus ministry and am a member of Alpha Phi.
I am a blogger that has a passion for writing and through my writing I hope to share my journey. I want to encourage others and empower other girls through what I have learned to have the best college experience possible. Strength and beauty come from within, so we need to strengthen and encourage others along our way to be the best, healthiest and strongest versions of themselves- and together we can conquer the world.
Why Gluten Free?
As a college student, one thing that makes me unique is I am gluten free. I have been gluten free since my senior year of high school. In the fall, I had noticed symptoms such as abdominal pain, bloating, upset stomach and extreme fatigue. After many doctor visits, and a visit to the Seattle Children’s Hospital, my diagnosis was an extreme intolerance to gluten and to treat it as if I had celiac disease. Because bread is different than the way it was 20 years ago, having an intolerance is becoming more common. It was not easy being a teenager and not being able to eat pizza anymore; but learning of new gluten-free brands and getting familiar with my eating habits, it gets easier every day. I am finding more tricks up my sleeve to be gluten free and feel healthy and empowered. College is a journey. Sometimes, the education seems like the simple part. It can be different learning ways to be healthy and happy in my new home but that is what makes college so exciting.
